This recipe makes 3 types of ramen: Salt Ramen, Soy Sauce Ramen, or Miso Ramen.
All instructions below make 1 serving.
Noodles
You can also just buy the noodles pre-made if you’d like. It’s still delicious.
INGREDIENTS
- 100g All-Purpose Flour
- Starch (not much)
- 45g Water (be very precise)
- 1/3 Tsp Baking Soda
- 1/5 Tsp Salt
- 1 Freezer Bag
DIRECTIONS
- Mix baking soda, salt, and water in a bowl.
- Add flour to the bowl and mix with a spatula. Finish the mixing by kneading the dough by hand.
- Put the dough in a freezer bag and step on it until it’s smooth (it’s weird but trust me).
- Let it rest in the fridge about 30 mins. If you can let it rest over night that is best.
- Stretch the dough using a pasta maker until it is ramen thickness.
- Sprinkle starch on the dough and cut it to make the noodles.
- Boil the noodles in water.
Choose Your Meat (or Vegetable)
JUICY SWEET PORK
Ingredients
- 50g Pork Belly
- 2 Slices Ginger
- 100ml Soup Broth
- 1 Tbsp Sugar
- 1 Tbsp Sake
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Mirin
Directions
- Put plenty of water, sliced ginger, and pork belly cut 1cm thick in a pot. Boil it for 30 mins on medium heat and remove boiled off fat from pork.
- Boil the soup broth and add the pork once boiling. Add all seasonings, cover with aluminum foil, and simmer over low heat until the pork becomes the colour of the sauce. I prefer to use a wok for this step.
SPICY CHICKEN
Ingredients
- 50g Minced Chicken Thigh
- 2g Ginger
- Chilli Bean Paste / Toubanjan (to taste)
- 2 Tsp Sugar
- 1/2 Tsp Sake
- 2 Tsp Soy Sauce
- 1/2 Tsp Mirin
Directions
- Mix chicken (thawed), minced ginger, and all seasonings well in a cold wok.
- Cook over medium heat until all juice is gone.
STEAMED VEGETABLES
Ingredients
- 30g Cabbage
- 25g Bean Sprouts
- Green Vegetables
- 1 Tbsp Water
- Pinch of Salt
Directions
- Put water and salt in a frying pan and heat to high.
- After the water is boiling, add the vegetables and put a lid covered with aluminum foil.
- Boil for 30 seconds.
Ramen Soup
Combine 600ml of water with 1 tbsp of chicken bouillon and add seasonings to make your desired ramen type per below.
SALT RAMEN
- 1/3 Tsp Coarse Salt
- 1/2 Tsp Light Soy Sauce
- Grated Garlic (to taste)
SOY SAUCE RAMEN
- Pinch of Coarse Salt
- Pinch of Sugar
- 1 Tsp Tamari (Dark) Soy Sauce
- 1 Tsp Ground Sesame
MISO RAMEN
- 2 Tsp Miso
- 1/4 Tsp Sugar
- 1 Tsp Dark Soy Sauce
- Grated Garlic (to taste)
- Grated Ginger (to taste)
Combining Soup & Toppings
Combine any meat and soup to your liking and add your favourite toppings and finally, FEAST. We typically use some combo of:
- Bean Sprouts
- Canned Corn
- Ramen Eggs
- Green Onion
